Deboner — Sierra County

Vacancy available: we are hiring a deboner in Sierra County, New Mexico. You will work at a busy retail butcher's shop. What we are looking for: • Knowledge of halal slaughter and handling where required • Physically fit to lift carcasses and stand all day Your main tasks: • Dress the chilled counter and rotate stock by date • Run the band saw to cut cleanly through bone • Debone shoulders, legs and loins with a boning knife • Break down beef, mutton and chicken carcasses into primal cuts • Stuff and link fresh sausages with casings • Weigh, price and label cuts for the display case Full-time with occasional weekends.
