Vacancy available: we are hiring a confectioner in Prince William County, Virginia. What we are looking for: • Familiar with deck, rack and convection ovens • Food handler / hygiene certificate Day-to-day duties: • Prove dough in the proofer at the right temperature and humidity • Rotate stock and follow FIFO on raw materials • Monitor oven temperature and baking time for each batch • Score the top of loaves before baking • Laminate puff and croissant dough by folding in the butter Freshers welcome — about 6 years of practice is enough.
