Head butcher — Luna County

Immediate opening: we are hiring a head butcher in Luna County, New Mexico. You will be based in a hotel or restaurant butchery. What we are looking for: • Able to identify primal cuts of beef, mutton and poultry • Physically fit to lift carcasses and stand all day Your main tasks: • Weigh, price and label cuts for the display case • Keep HACCP hygiene records and sanitise the block and tools • Trim fat, sinew and silver skin off the cuts • Dress the chilled counter and rotate stock by date • Take customer orders and advise on cuts and cooking • Mince meat and prepare keema on the grinder At least 5 year(s) in a similar role.
