You should have: • Knowledge of dough fermentation and proving • Basic cake decorating and piping skills • Accurate at weighing and following recipes The role involves laminate puff and croissant dough by folding in the butter; shape loaves, rolls, baguettes and buns by hand; roll out short-crust and biscuit dough; boil sugar syrup for glazes and icing; proof and fry doughnuts, then glaze them; monitor oven temperature and baking time for each batch.
