Requirements: • Understanding of food-safety and HACCP basics • 2+ years' experience as a baker • Accurate at weighing and following recipes You will load and unload the deck oven with a peel; prove dough in the proofer at the right temperature and humidity; monitor oven temperature and baking time for each batch; rotate stock and follow FIFO on raw materials; laminate puff and croissant dough by folding in the butter.
