The role involves: • Sharpen and hone knives on a steel and whetstone • Vacuum-pack and wrap customer orders • Break down beef, mutton and chicken carcasses into primal cuts • Keep HACCP hygiene records and sanitise the block and tools • Weigh, price and label cuts for the display case • Run the band saw to cut cleanly through bone You should have: • Confident knife skills and safe blade handling • 2+ years experience working as a butcher Overtime paid at a premium rate.
