You should have: • Able to use a band saw, grinder and sausage filler • Confident knife skills and safe blade handling The role involves: • Sharpen and hone knives on a steel and whetstone • Trim fat, sinew and silver skin off the cuts • Vacuum-pack and wrap customer orders • Season and marinate meat on request • Weigh, price and label cuts for the display case • Keep HACCP hygiene records and sanitise the block and tools Performance bonus on top of base pay.
