The role involves scrape leftover food off plates and pre-rinse before loading; scrub out grease traps and clear blocked drains and gullies; wash chopping boards, knives and kitchen utensils; restock clean glassware and crockery behind the bar; hand-wash pots, pans and trays using the three-sink wash-rinse-sanitise method; keep the dish pit tidy, dry and slip-free throughout service.
