Urgent requirement: we are hiring a confectioner in Brazos County, Texas. You will be based in a hotel pastry kitchen. Ideal candidate: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens • Food handler / hygiene certificate On a typical shift you will proof and fry doughnuts, then glaze them; monitor oven temperature and baking time for each batch; rotate stock and follow FIFO on raw materials; prove dough in the proofer at the right temperature and humidity; load and unload the deck oven with a peel; roll out short-crust and biscuit dough.
