On a typical shift you will break down beef, mutton and chicken carcasses into primal cuts; weigh, price and label cuts for the display case; portion steaks, chops and cutlets to the ordered weights; debone shoulders, legs and loins with a boning knife; stuff and link fresh sausages with casings; season and marinate meat on request. What we are looking for: • Clean, presentable and friendly at the counter • Physically fit to lift carcasses and stand all day Freshers welcome — about 2 years of practice is enough. $4,500 per month, negotiable for the right hands.
