Ideal candidate: • Able to work early-morning and night shifts • 2+ years' experience as a baker Day to day you will boil sugar syrup for glazes and icing; check finished products for colour, crumb and weight; knead and develop dough by hand and in the spiral mixer; laminate puff and croissant dough by folding in the butter; weigh and mix flour, yeast, water and salt to the day's recipe.
