Requirements: • Confident knife skills and safe blade handling • Quick and accurate on the weighing scales and order maths • Physically fit to lift carcasses and stand all day Day to day you will keep HACCP hygiene records and sanitise the block and tools; debone shoulders, legs and loins with a boning knife; monitor chiller and freezer temperatures to keep the cold chain; keep halal cuts separated and clearly handled; sharpen and hone knives on a steel and whetstone.
