Sausage maker — Frederick County

Urgent requirement: we are hiring a sausage maker in Frederick County, Maryland. Day-to-day duties: • Portion steaks, chops and cutlets to the ordered weights • Run the band saw to cut cleanly through bone • Keep HACCP hygiene records and sanitise the block and tools • Dress the chilled counter and rotate stock by date • Season and marinate meat on request • Take customer orders and advise on cuts and cooking Requirements: • Knowledge of halal slaughter and handling where required • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry Full-time with occasional weekends.
