Bread baker — Lea County

Urgent requirement: we are hiring a bread baker in Lea County, New Mexico. You will be based at a café with an on-site bakery. What we are looking for: • Knowledge of dough fermentation and proving • Familiar with deck, rack and convection ovens The role involves: • Rotate stock and follow FIFO on raw materials • Knead and develop dough by hand and in the spiral mixer • Load and unload the deck oven with a peel • Monitor oven temperature and baking time for each batch • Proof and fry doughnuts, then glaze them • Shape loaves, rolls, baguettes and buns by hand Performance bonus on top of base pay. Six days a week, one day off. Walk-in interviews this week.
