Vacancy available: we are hiring a confectioner in Putnam County, Illinois. You will work at a cake shop. You should have: • Understanding of food-safety and HACCP basics • Familiar with deck, rack and convection ovens • Able to work early-morning and night shifts On the job you will handle: • Knead and develop dough by hand and in the spiral mixer • Load and unload the deck oven with a peel • Prove dough in the proofer at the right temperature and humidity • Laminate puff and croissant dough by folding in the butter • Proof and fry doughnuts, then glaze them Full-time, day shift.
