We are recruiting: we are hiring a sausage maker in Clark County, Arkansas. Requirements: • Food hygiene / HACCP certificate • Able to identify primal cuts of beef, mutton and poultry • Knowledge of halal slaughter and handling where required Day to day you will portion steaks, chops and cutlets to the ordered weights; vacuum-pack and wrap customer orders; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; run the band saw to cut cleanly through bone.
