Confectioner — Tripp County

Great opportunity: we are hiring a confectioner in Tripp County, South Dakota. You will work in a hotel pastry kitchen. What we are looking for: • Understanding of food-safety and HACCP basics • Basic cake decorating and piping skills • Accurate at weighing and following recipes Your main tasks: • Check finished products for colour, crumb and weight • Load and unload the deck oven with a peel • Roll out short-crust and biscuit dough • Prove dough in the proofer at the right temperature and humidity • Knead and develop dough by hand and in the spiral mixer Freshers welcome — about 4 years of practice is enough.
