You will keep HACCP hygiene records and sanitise the block and tools; take customer orders and advise on cuts and cooking; run the band saw to cut cleanly through bone; season and marinate meat on request; dress the chilled counter and rotate stock by date. Ideal candidate: • Physically fit to lift carcasses and stand all day • Able to identify primal cuts of beef, mutton and poultry Six days a week, one day off.
