You should have: • 2+ years experience working as a butcher • Confident knife skills and safe blade handling • Comfortable working in cold rooms and chillers The role involves: • Trim fat, sinew and silver skin off the cuts • Monitor chiller and freezer temperatures to keep the cold chain • Season and marinate meat on request • Take customer orders and advise on cuts and cooking • Keep HACCP hygiene records and sanitise the block and tools • Break down beef, mutton and chicken carcasses into primal cuts At least 1 year(s) in a similar role.
