You will portion steaks, chops and cutlets to the ordered weights; break down beef, mutton and chicken carcasses into primal cuts; mince meat and prepare keema on the grinder; stuff and link fresh sausages with casings; trim fat, sinew and silver skin off the cuts; debone shoulders, legs and loins with a boning knife. You should have: • Quick and accurate on the weighing scales and order maths • Confident knife skills and safe blade handling Freshers welcome — about 6 years of practice is enough.
